Yönetim ve Örgütsel Davranış dersi, gastronomi sektöründeki yönetim ve organizasyonel davranış dinamiklerini keşfetmeyi hedeflemektedir. Bu derste öğrenciler, restoranların, otellerin ve diğer yiyecek-içecek işletmelerinin etkili yönetimi için gereken teorik ve pratik bilgiye sahip olacaktır. Dış ve iç unsurların çalışan motivasyonu, takım çalışması ve liderlik üzerindeki etkileri incelenerek, sektördeki yenilikçi yaklaşımlar ve sürdürülebilirlik konuları da ele alınacaktır. Ders kapsamında vaka çalışmaları ve interaktif tartışmalarla, gastronomi alanında başarılı yönetim stratejileri geliştirme becerileri kazandırılması amaçlanmaktadır.
